At Core in Notting Hill, Michelin triple-star chef Clare Smyth drives foodies into a frenzy with her high-end riffs on everyday grains and vegetables, in particular, the baked potato. She's recently opened Oncore in Sydney, and is planning a third restaurant, in addition to publishing her first cookbook this summer, although it's not for amateurs.
